2 chicken breast fillet, grilled and chopped
2 teaspoons extra-virgin olive oil
½ cup chopped red onion
2 garlic cloves, minced 1 can kidney beans, rinsed
2 cups chopped kale 1 cup cooked rice
½ cup salsa
½ teaspoon cumin
1 teaspoon oregano
1 cup sharp cheddar cheese
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
¼ teaspoon salt
4 (8 inch) whole-wheat tortillas


  1. Heat oil in a large nonstick skillet over medium heat. 
  2. Add garlic and onion, saute until the onion softens. 
  3. Stir in beans, salsa, rice, chicken and kale, season with cumin and oregano. 
  4. Remove from heat. 
  5. Add in cheddar, cilantro, lemon juice and salt. 
  6. Stir gently until the cheese is melted.
  7. To assemble, divide the mixture into 4. Spread the mixture on the bottom of each tortilla, and roll tightly. 
  8. Place the burritos in the oven, and bake at 375°F for 10 minutes. 
  9. Garnish with sour cream and salsa if you feel like it!
