This superfood black bean and quinoa salad recipe is so delicious you won’t even notice it’s vegan! All of the ingredients in this salad are great for you. Quinoa is a complete protein filled with fiber and all 9 essential amino acids. It is also a great source of complex carbohydrates and antioxidants. Black beans, like quinoa, are packed with fiber, protein, iron, potassium, magnesium, and folate.

Everything in this black bean and quinoa salad is rich in both flavor and nutrition!

Serves 4 | Prep time: 25 mins


1 cup quinoa, uncooked

1 1/2 cups water

2 tablespoons lemon juice

2 tablespoons apple cider vinegar

1 cup edamame, cooked

1/2 cup red bell pepper, sliced

1/2 cup kidney beans

1/4 cup coriander

1/2 cup cherry tomatoes, halved

1 medium red onion, sliced thinly

1/2 cup sweet yellow corn kernels

1 teaspoon black ground pepper

1 teaspoon sea salt


Mix the quinoa, water, lemon juice, apple cider vinegar on a saucepan. Cook over medium-high heat, stirring occasionally. Reduce the heat to low after 5 minutes, cover the pan, and cook for about 10 to 15 more minutes, or until all liquid has been absorbed. Turn off the heat once done.

Add in edamame, red bell pepper, kidney beans, cherry tomatoes, red onion, coriander, corn, salt and pepper to taste. Mix well and serve. This salad may be served warm or fresh and at room temperature.
