Sabrina's Hainan Adlai Chicken with Mango Cilantro Recipe

Who said healing food is boring and cooking is tough? Not Sabrina's recipes!

This is a one pot Hainan adlai chicken with a mango cilantro siding and a sweet chili, sesame, soy and ginger dip. This beautiful recipe is brilliant and super simple! Combined with the sweet chili dip and a fab Thai salad, it's a healing food feast indeed!

Recipe 1: Hainan Adlai Chicken

In a rice cooker sauté 2 tsp chopped garlic in 2 tbsp sesame oil. Add 2 tbsp shaved ginger, 2 tsp salt and 2 chicken breast (bone in), and 3 tbsp chopped leeks. You may use leg or wing or thigh--it's up to you! Then add 1 cup hineleban adlai. Add 3 cups julienned cabbage, 3 dashes cayenne, 3 dashes black pepper. Then finally about 6 to 7 cups water. Let cook. Once rice cooker automatically goes to heat, your hainan adlai is done!

Recipe 2: Sweet Ginger Chili Dipping Sauce

In a bowl beat together 1 tbsp sesame oil, 1/2 tsp coco sugar, 2 tsp patis, 2 tbsp shaved ginger, 1 tbsp soy sauce, 2 tbsp mccormick sriracha, and finally 1 tbsp water. Add a tbsp chopped leeks. Set aside.

Recipe 3: Petchay Basil Thai Salad

In a bowl place 3 cups julienned petchay, 2 cups fresh basil, 1/3 cup chopped tomatoes and white onions, 2 tbsp chopped dried mangoes, and 1/3 rd cup tamarind candy bits.

Dressing:

In a bowl beat together 2 tbsp extra virgin olive oil, 1 tsp coco sugar, 2 tsp patis, 2 tbsp cider vinegar, 1/2 tsp cumin. Beat together and set aside.


Finally top off salad with tamarind bits, dried mangoes, and peanuts! Serve with dressing on the side.

For hainan adlai chicken, on a deeper dish place layer of adlai and cabbage. Then top off with chicken. Set soup aside in separate bowl, then add fresh mushrooms and leeks.

Don’t forget to drizzle sweet chili sauce dip over top of chicken.
