Ingredients:
Olive oil
1 cup cooked adlai
1/3 cup raisins
1/3 rd cup nuts
1/3 rd cup mint or parsley
1 tsp turmeric
1/2 tsp salt & pepper
1 tsp lemon pepper seasoning
Juice of 6 calamansi
Bell pepper, sliced
Pineapple chunks
1/4 kilo chicken breast
Directions:
- In pan drizzle olive oil. Add 1 cup cooked adlai, 1/3 cup raisins, 1/3 rd cup nuts, and 1/3 rd cup mint or parsley.
- Add 1/2 tsp turmeric, salt, pepper.
- Let fry for about 8 minutes! Set onto dish.
- Then in bowl season 1/4 kilo chicken breast cut in thick 1.5 inch cubes.
- Add 1 tsp lemon pepper seasoning, 1/2 tsp turmeric and 1/2 tsp cumin. Salt, pepper and juice of 6 calamansi. (this is my go to best Mediterranean barbecue marinade).
- Begin to skewer with bell pepper and pineapple alternating chicken. Then in hot grill pan, place skewers.
- Let sear about 3 minutes per side.
- Place onto turmeric adlai dish and garnish w mint! A yogurt garlic dip optional.
